Apricots do not ripen after picking so it is important that they are slightly soft to the touch when picked.
If they are too firm and have a greenish-yellow colour they have not been tree ripened.
Refrigerate for a day or two in a plastic bag.
Allow fruit to warm to room temperature before eating.
The fruit should NOT be washed until ready to eat or cook.
